Gooey Cheesy Easy Enchiladas

I LOVE Mexican food. Give me tacos, enchiladas, guacamole, rice and beans any day. I'M IN! I also love easy recipes that I can make fairly quick, with a small amount of prep, and easy clean up because I loathe dishes LOL, and it's icing on the cake when my kids say that they enjoy the food I am making them just as much as I do! Score!

Quick, gooey, cheesy, easy ground beef enchiladas. Also this is very wallet friendly! Especially if you have kids and are on a budget. 🙂 These are also great as leftovers!


Gooey Cheesy Easy Enchiladas

Servings: 12 enchiladas

Prep time: 15-20 min cook time 40-45 min

Ingredients:

2 pounds ground beef

2 tbs of olive oil

1/2 white onion, diced

3 cloves of garlic

2 packets of taco seasoning

6 sweet bell peppers chopped

1 28 oz can of red or green enchilada sauce

12 burrito/large sized tortillas

1 8 oz package of Mexican blend cheese

Sour cream

Avocados or guacamole as toppings

Directions:

Preheat oven to 350 degrees. Turn a burner on medium heat and heat up a large skillet and your olive oil. Throw in your diced onion, and chopped bell peppers. Let them cook down for a couple minutes, until the onion begins to soften. Add in your garlic. Stir to combine for about two minutes, until fragrant. Put in your ground beef and begin to brown. Once browned, drain the grease from your pan. Pour about a half cup of water in the pan along with the two packets of taco seasoning. Spray or coat two 9x13 pans with olive oil, or coconut oil. Take a tortilla and put about 3/4 cup to 1 cup of the ground beef mixture into each tortilla, then roll up like a burrito and place into your pan. Place side by side until all your mixture is used. Then pour your can of enchilada sauce onto your enchiladas. Don't be shy! Pour the whole can between the two pans. Then cover with foil and cook for 30 minutes. Next remove your foil, sprinkle, or dump your cheese over each pan, depending on how cheesy you like your enchiladas, then place in the oven for another 10-15 minutes or until cheese is melted. Serve will a dollop of sour cream, and guacamole or avocado and enjoy with rice, beans, chips and salsa, etc.
